Cooking a Whole Chicken
Rub chicken inside and out with oil of choice. (I like butter or pork lard, but you could also use olive or coconut oil)
Season with seasoning mix that will compliment the dish you are using the chicken for. Below are some ideas…
Savory: Sage, thyme, rosemary, garlic, salt and pepper
Fajitas: cumin, oregano, garlic, onion, cayenne, salt, pepper
Tacos: chili powder, garlic, onion, oregano, red pepper flakes, paprika, cumin, salt and pepper
Curry: depends on the region from where your curry is from, but many times to save time I just season it with an Indian curry powder and work in the other seasonings when I am making the sauce.
Roast at 425 degrees for 15 - 30 minutes, then drop the temperature to 375 degrees and roast for another hour or more depending on the size of the chicken.
