My favorite way to cook beets…

Wash and remove stems. Wrap with foil and bake at 400 degrees for an hour or so. Let cool and use your hands to take the peels off. They should come off easily. Cube and toss with olive oil, balsamic vinegar and feta cheese. Enjoy!
